The Baba Ganoush Salad

The first bowl of babaganoush salad had the dressing mixed through.

To make the babaganoush I roasted eggplant and a bell pepper, which I pureed with a fresh tomato, several cloves of garlic, salt, sesame seeds, lemon juice, and sesame seeds. This time I made a smooth babaganoush to use as a vegan salad dressing.

    1. Baba ganoush is a popular eggplant dish in Greek and Middle Eastern cuisine, so if you have tried those cuisines, you might have tried it. I just do it differently, and use it as a salad dressing because I do not want to eat it with a whole bunch of bread.

    1. Did you guys eat a form of babaganoush, roasted eggplant dishes, growing up in Israel. I have heard baba ganoush is popular in the Near East in many areas, but has different names.
